One Pot Wonders

one pot recipes to simplify meal pre

We've pulled together some of our go-to one pot recipes to simplify meal prep this month so you have time for the (1 million) other things on your to-do list.

One Pot Pastas
Weeknight gold. These pastas cook all in one pot, no boiling or straining required. The best part? As the cooking liquid (anything from chicken stock to milk to wine) reduces, it imparts flavor and creates a creamy sauce.

Seasonal Soups
Let what's fresh and local inspire your soup this winter. Keep this simple method in mind and you can make a soup from any vegetable you have on hand!
-Prep Main Ingredient (i.e. Squash, Potatoes, Carrots, etc.)
- Choose some aromatics (i.e. garlic, onion, leeks, etc.)
- Sauté the vegetables and aromatics in fat of choice (We usually like a mix of butter and olive oil for a rich, flavorful soup)
-Add extras like spices, tomato paste, or keep it simple and season with just salt and pepper.
- Cover with cooking liquid of choice by one inch (you could use stock or water here) and simmer until main ingredient is cooked through.
-Finish the soup. Puree or mash by hand to desired consistency and finish with a touch of cream or coconut milk for a creamy consistency!
Note: Alternatively you could roast your main ingredients and aromatics rather than sauté them for extra flavor, then just proceed by adding them to a pot, adding 'extras' and simmering with liquid of choice.

Hearty Braises
It may not be quick, but braising something low and slow couldn't be easier. Most of the cooking time is hands off, so these are great for Sunday supper. Get them started after breakfast on Sunday morning and enjoy them for dinner that night!
Apple Cider Braised Short Ribs with Sage Butter Mashed Potatoes by @halfbakedharvest
These ribs braise in the slow-cooker, and could work for an easy supper at home or a dinner party.
