We’ve started this week off with some Asian inspired meals. Start your week off with a DIY Sashimi Rice Bowl -this recipe calls for salmon but if you purchased tuna for the crispy rice; you can use that as a swap in (or vice versa). Into the middle of the week, we went for winter squash. To keep it light into Tuesday we’ve put on the menu a butternut squash roasted salad and then on Wednesday you're going to use up any leftover butternut squash to make this creamy butternut squash mac and cheese. Following a healthy take on French Onion Soup using spaghetti squash.
Carry yourself into the weekend with a pot of chicken chili, and our weekend bonus recipe for cherry chocolate cashew butter cups. We’ve added enough to this week’s menu to get you through the weekdays, and you’ll have leftovers to heat up for lunch.
