7 Easy Meals for the Busy Week Ahead!

We’ve started this week off with some Asian inspired meals. Start your week off with a DIY Sashimi Rice Bowl -this recipe calls for salmon but if you purchased tuna for the crispy rice; you can use that as a swap in (or vice versa). Make sure to cook up extra rice to use for @alexawhatsfordinner’s Spicy Tuna Crispy Rice. This recipe has been on fire-so do yourself a favor and make it this week!

Into the middle of the week, we went for winter squash. To keep it light into Tuesday we’ve put on the menu a butternut squash roasted salad and then on Wednesday you're going to use up any leftover butternut squash to make this creamy butternut squash mac and cheese. Following a healthy take on French Onion Soup using spaghetti squash.

Carry yourself into the weekend with a pot of chicken chili, and our weekend bonus recipe for cherry chocolate cashew butter cups.  We’ve added enough to this week’s menu to get you through the weekdays, and you’ll have leftovers to heat up for lunch.

Sunday Prep: Sashimi Rice Bowl & Spicy Tuna Crispy Rice

Start your prep on Sunday by making a big batch of sushi rice to use for the Sashimi bowl and for the next day when you make a Tuna Crispy rice- which is best used with leftover rice.

Midweek Prep:  Roasted Butternut Squash Salad, Butternut Squash Mac and Cheese, and French Onion Spaghetti Squash

Roast up all the squash Tuesday, including the spaghetti Squash (you can reheat it on Thursday.) prepare any dressings for the salad.

Finish Strong: Chicken Chili & Chocolate Cherry Cashew Butter Cups

This chili will make enough to carry you through the weekend. Cornbread is always advised! Chocolate is never a bad idea, so end your week with @lisathompson’s cashew buttercups.

French Onion Spaghetti Squash
