ingredients

  • 2 pounds chicken breast
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh chopped rosemary
  • Kosher salt, as needed
  • Black pepper, as needed
  • 1/4 cup all purpose flour
  • 1/4 cup dry white wine
  • 1/4 cup water
  • 1/4 cup Annie's Organic Balsamic Dressing.
  • 2 peaches, sliced
  • 1 lemon, zested
  • 8 ounces fresh burrata, torn
  • Fresh basil leaves, for topping

Method

  • Step 1

    Rub the chicken all over with olive oil, rosemary, and season generously with salt and pepper. Sprinkle the flour evenly over the chicken and toss to coat, adding more flour if needed to cover the chicken.

  • Step 2

    Heat a skillet to medium high heat with a 1 tbsp olive oil and the chicken. Sear on both sides until golden, about 5 minutes per side. Reduce the heat to medium low and pour in the wine and 1/4 cup water, breaking up any bits from the pan. Let the wine cook down and then add ¼ cup Annie's Organic Balsamic Dressing. Simmer the chicken for 5 minutes, until cooked through. Arrange the peaches evenly around the chicken and let the sauce cook for another 2-3 minutes, basting the chicken and peaches in the sauce. Add salt and pepper to taste.

  • Step 3

    Once the chicken has cooked through, arrange the burrata around the peaches and chicken, add lemon zest, garnish with basil and serve!
