- 1 tablespoon ginger, grated
- 6 cups water
- 1/ 4 cup tamari
- 1/ 4 cup miso paste
- 8 ounces green tea soba noodles, cooked according to package directions
- 4 eggs, soft-boiled
- Shiitake, grilled
- Broccolini, grilled
- Pea sprouts, to serve
- Scallions, sliced or veggies of choice.
- Toasted sesame oil, to serve
Bring water, ginger and tamari to a boil then reduce heat to a simmer and cook for 10 minutes.
Whisk about 1/2 cup of ginger liquid into the miso, then whisk miso mixture into the pot. Continue simmering for about 3 minutes, but do not let boil.
Serve broth with cooked noodles, eggs, garnishes of choice and a drizzle of toasted sesame oil.
