Yesterday marked my last first day of law school ?? I went back to HUSL only to realize that everybody is on a diet trying to turn their life around. I ain’t mad tho ???‍♀️ so in honor of NYE resolutions, healthy eating, & the journey to slim thickness I’m debuting the first of many “Gucci Bowls” that I’ll be eating to keep my diet on track. Yes, I said Gucci Bowl and not Buddha Bowl. I’m reclaiming Buddha Bowls under a new name because Gucci Mane represents the resilience and steadfastness that we all need in this short period before swimsuit season. May your discipline be unwavering and your post-holiday snatch be as strong as Gucci’s comeback in 2017. Bless up and may you find God, Unity, Wisdom, Opportunity and Power all 2018. ?? . . . . . But forreal forreal, I spent this week strategizing and planning how I am going to reach each and every goal I set for this year. This year I am hoping to grow my food & travel blog, become a barred attorney (amen amen! ??), and increase my spiritual & physical strength. There’s power in vocalizing and writing out what you plan to achieve. If nothing at all, it helps others keep you accountable. ☝?

Gotta take a moment to express how thankful I am to have gained so many supporters. Not too long ago cooking was just a hobby, but it has slowly turned into something that I have been sharing with my friends and family. Although I know I have a long way to go, I can confidently call myself a (baby) food blogger. Several times, I’ve considered giving it up out of stress that I don’t have time, or fear that I’m not really impacting anyone. The journey towards slim thickness continues 🙌🏾 (minus the two glasses of moscato I had yesterday 👀🤦🏾‍♀️ it happens to the best of us). Currently compiling a collection of #SlimThickDiet recipes to share with y’all because Spring Break is around 👏🏾 the 👏🏾corner!! This little parfait cup is about to be added to the list. Recently, I’ve been living off of plain Greek yogurt for breakfast. One cup has 23 grams of protein and zero zero zero grams of fat. It’s super quick to make for all the days where I’m rushing to to get to class and / or work. So basically everyday. . . . I lined the bottom of the cup with a sprinkle of cinnamon and a light drizzle of agave. Added about a half cup of yogurt and topped that with crushed walnuts, blueberries, and coconut chips. Added another light light drizzle of agave and too with the rest of your yogurt. Sprinkle some cinnamon atop and grab a spoon. Hopefully you have a stash in your car like me. 🤷🏾‍♀️
“Dirty Quinoa” & Red Beans with Chicken and Andouille Sausage | They asked me “what’s your specialty?” I said flavor 💁🏾‍♀️🔥 . . . Mix salt, pepper, garlic powder, onion powder, and dried oregano in a small bowl. Coat chicken with juice of half a lemon, ½ tablespoon olive oil, and seasoning mix. Set aside. Bring 1 cup of water and 1 cup of chicken broth to a boil. Add olive oil, garlic powder, onion powder, and quinoa. Simmer for about 15 minutes. In a large cast iron skillet, brown sausage and transfer to a plate. Do not rinse the pan or drain any grease. Add chicken thighs to pan and sear on both sides for 3-4 minutes on medium heat. Chicken should have a nice crispy skin, but only cooked about 75% through. Transfer to a plate. Sauté celery, peppers, and onions on medium heat while scraping up any brown bits from the bottom. Add quinoa, chicken broth, red pepper flakes and a pinch of kosher salt. Mix in sausage and kidney beans. Top with chicken thighs and transfer cast iron to oven for about 25-30 minutes. a quick steel cut oatmeal with cinnamon, brown sugar, blueberries, and walnuts 🥣 . . . . Between Gucci Bowls and doing a Slim Thick Diet Recipe series, I have so many recipes and combinations that my head is spinning y’all. Forgive me for the sporadic posting but I have to be a law student at some point. Soon come though! 🙏🏾😩😭😂
