"Peri Peri Duck, Crispy New Potatoes & Kale. The duck was marinated overnight in a paste made with African bird's eye chili, ginger, citrus peel, bay, garlic & salt. I then put it in my Instant pressure cooker until tender and broiled it. Traditionally any bird made "peri peri" or "piri piri" sauce would be cooked over an open flame, but today I'm in the mood for fast flavor. There is nothing like that char though. The use of peri-peri chillies and sauces filtered into South Africa from Portuguese-speaking neighbouring countries Mozambique and Angola. The African Bird’s Eye chilli is a member of the capsicum family of chillies. It is smaller than the average chili and very hot. Traditionally meat is marinated in a sauce made from these chilis and then cooked on an open flame. Use any small and potent chilli if unable to locate these.

Serves 4

Ingredients

 8 cloves garlic (finely chopped)

1/2 cup oil

1/2 cup brown vinegar 

1/2 cup lemon juice

1/2 cup water

1 tbsp smoked paprika

1 tbsp chilli powder

1 tbsp salt

4 small hot chillies (peri-peri/African Bird’s Eye – chopped)


Method

Finely mince the garlic and add to a jar with the oil, vinegar, lemon juice, water, paprika, chili powder, chillies and salt. Shake well until the ingredients are mixed and all the salt dissolved. Taste the sauce and add more chopped chili if you prefer a spicier sauce. Wear gloves while preparing the sauce or use caution when handling, do not touch your face to prevent any burns. 

Let this jar sit for a week in the refrigerator and then use an immersion blender to blend until it forms a smooth sauce. It will keep in the refrigerator for 2 weeks and can be used to marinate any meat, kebabs or even as a dipping sauce.

Prepare 4 duck marylands by placing it in a plastic zip bag with 1/4 cup peri-peri sauce. Leave to marinate overnight.

Broil on low for 10-12 minutes on each side. Serve with a salad, potatoes or any vegetable of your choice.
