Cheesy Spaghetti Squash And Chickpea Croquettes

This is such an impressive and delicious treat. Sphagetti squash with chickpeas, not only delicious, it's a great gluten free option. Beautiful.
I love this new take on a traditional dish! spaghetti squash is the perfect low carb replacement for pasta.
RECIPE:
Ingredients:
2 cups chickpea flour
1 cup roasted spaghetti squash
1 egg
1/4 cup roasted red pepper, finely chopped
1 tsp chopped chipotle chili
1 tsp finely minced garlic
1 tsp cumin
1/2 cup finely diced onion
Pinch of salt and pepper Extra chickpea flour to roll in.
Oil, for frying.
Optional: 1/4 cup shredded Parmesan cheese
Method:
Combine all ingredients and mix well.
The consistency should make it easy enough to roll mixture into balls using the palms of your hands.
Roll the croquettes in a bit more chickpea flour to ensure that they do not stick.
Fry croquettes in medium hot oil for 4-5 minutes flipping once. Croquettes should be golden in color.
Remove from oil and drain on paper towel. Serve warm with dipping sauce of your choice.
