Croque monsieur has been pie-ified by @emcdowell in her new book The Book on Pie. Rough Puff Pastry is topped with prosciutto, shredded Gruyère cheese, and béchamel sauce then baked to golden brown, flaky perfection. I used to be afraid of attempting puff pastry, but not anymore. All it takes is a good recipe, some time and lots of 🧈. I just had to top a few with a runny egg and turn them from monsieur to Croque madame. Served these up with some OJ in my favorite little juice glasses. No need to go out when I can make a breakfast like this at home. Now if I could just get someone to do all the dishes.
