Shortbread Crust
ingredients
- 1 cup almond flour
- 3 tablespoons honey or maple syrup
- 1/4 teaspoon sea salt
Caramel
ingredients
- 1/3 cup cashew butter
- 3 tablespoons honey or maple syrup
- 1/4 teaspoon salt
Chocolate Coating
ingredients
- 6 ounces dark chocolate, melted
Method
Step 1
Add the shortbread ingredients to a small bowl and mix until a sticky dough forms. If the dough is too dry, add more sweetener.
Step 2
Line an 8x5 loaf pan with parchment paper and add the dough to bottom of the lined pan. Use a piece of parchment paper to smooth the dough until it covers the entire bottom of the pan. Bake at 350F for 10-15 minutes, until golden brown.
Step 3
While the crust bakes, mix together the caramel. Once mixed, heat in the microwave just until the mixture starts to bubble (heating optional).
Step 4
Once the crust is cooled, spread the caramel over it and place in the freezer to harden.
Step 5
Once the shortbread and caramel have hardened, remove from the freezer. Place on a small cutting board and slice into 6-8 bars.
Step 6
Next, melt your chocolate (on the stovetop or in the microwave). Option to add 1 tsp coconut or MCT oil to the chocolate to help thin the chocolate.
Step 7
Coat each bar in melted chocolate then place on a tray lined with parchment paper. Sprinkle with seat salt and refrigerate until the chocolate has hardened, then enjoy! Store in the fridge or freezer.
