Sesame Sandwich Cookies With Halva Cream

sesame crips cookies--makes about 25 

100g (5tbsp) honey

30ml (2tbsp) water

pinch of salt

110g (3/4 cup) sesame seeds

20g (1 1/2 tbsp) butter

halva cream filling

30ml (2 tbsp) heavy cream

40g (2 tbsp) tahini

100g white chocolate, chopped

40g (3 tbsp) butter

15g (1tbsp) honey


sesame crisp cookies

Preheat oven to 350F. 

In a small saucepan, melt honey, water and salt. Bring to a boil and then let simmer for 2-3 minutes while stirring. Remove from heat and stir in sesame seeds and butter.

Drop 1/2 teaspoons of batter on to 2inch round circle silicone molds. Bake for about 12-15 minutes or until golden brown. Let cool completely.

halva cream filling

In a small saucepan, melt heavy cream, tahini, white chocolate, butter and honey. Refridgerate for 2 hours until set. 

Using a small offset spatula or a piping bag spread filling on one cookie and top with another to make a sandwich. Repeat process with remaining cookies. Store cookies in an air tight containter in a refridgerator.
