A wholesome spin on a beloved Easter treat? Yes please! These Peanut Butter Egg Dates are the perfect balance of sweet, salty, and chocolatey with a punch of peanut butter flavor. Stir peanut butter into almond flour to create a filling that is a near-identical dupe of the original, with only pantry 2 ingredients (and no added sugar!).
Recipe Description
Use your favorite peanut butter in this recipe. I chose a dark-roasted and salted variety to really pack the peanut butter flavor. Trader Joe's roasted peanut butter is also an excellent option. I used milk chocolate in this recipe to make the flavor closely match the original candy, but you can use any chocolate variety here. Seek out the squishiest, caramelly-est dates you can find to make shaping them into eggs even easier.

- 6 ounces milk chocolate
- 12 whole medjool dates
- 1/2 cup almond flour
- 1/2 cup peanut butter
- (optional) Flaky sea salt

Step 1
Line a small baking sheet or plate with parchment paper or wax paper.
Step 2
Melt the chocolate in the microwave or over a small pot of simmering water until it reaches a pourable consistency.
Step 3
Tear the dates in half but try not to separate the two pieces. Remove and discard the pits.
Step 4
Stir the peanut butter into the almond flour until it forms a cookie dough consistency. Add more peanut butter or more almond flour to adjust, if necessary.
Step 5
Fill each date with about one teaspoon of the peanut butter filling. Pinch the two date halves together to adhere. Repeat until all dates are stuffed. Squash the dates into a flattened oval shape, if desired, to give them the look of true peanut butter egg candies. This step is optional.
Step 6
Skewer the stuffed dates onto a toothpick, bamboo skewer, or cake tester and coat evenly in the melted chocolate, letting the excess drip back into the bowl. Arrange the dipped dates on the prepared baking sheet. Sprinkle each date with flaky sea salt, if desired, and let set in a cool spot away from any heat sources. Note: You can also chill the dates in the refrigerator to speed up the process, but letting the chocolate set at room temperature gives it a softer bite, which is more similar to the original peanut butter candies.
