"So, in case you missed it on my Instastory, I made sandwiches last night for dinner, using an ingredient I've been reading up on a lot lately: HUMMUS. I know, it's not a new thing, but I never realized how good it is for you! Hummus is made out of garbanzo beans, and studies have proven over and over again that beans are among the heart healthiest foods on the planet--they lower cholesterol and in so doing, lower the risk of the number 1 killer on earth: heart disease. And hummus tastes frakking amazing! So I mixed it with a little soy sauce and gochujang, slathered it all over my Cauliflower steaks, which I then dredged in some almond meal, and baked them till they were golden brown and crunchy. [Yes. Drooling is an entirely acceptable response.] I then piled my sandwich with as many veggies as I could fit and this beauty was born. Another favorite in the Korean Vegan household. Hummus & Veggie Sandwich

Ingredients:
Cauliflower
Almond meal
Hummus
Soy sauce
Gochujang
2 slices of bread
Veggies (such as lettuce, cucumbers, raddishes and carrots)
Method:
Preheat oven to 400F
Dredge cauliflower steaks in almond meal and bake until golden brown and crunchy, about 20 minutes.
Mix hummus with a little soy sauce and gochujang and spread on bread.
Add cauliflower steaks and veggies of choice, such as cucumber, lettuce, raddishes and carrots.
