Recipe

  • 8 slices GF whole wheat bread
  • 1/ 2 cup hummus
  • 1/ 4 cup mustard
  • 1 avocado
  • 1 cucumber, thinly sliced
  • 1/ 2 cup cherry tomatoes, halved
  • 1/ 4 cup red onions, thinly sliced
  • 1/ 4 cup red bell peppers, thinly sliced
  • 4 slices vegan cheese

Method

  • Step 1

    Toast all slices of bread.

  • Step 2

    Divide hummus and mustard between 4 bread slices, spread evenly. Divide remaining ingredients between slices, top with another bread slice, and serve immediately.
