This shredded carrot and red cabbage salad is a simpleand refreshing weeknight meal or weekday lunch.

ingredients

  • 2 cups shredded carrots
  • 2 cups shredded red cabbage
  • 1/2 cup uncooked black rice
  • 1/4 cup sprouted seeds
  • 3 tablespoons olive oil
  • 1 teaspoon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Method

  • Step 1

    Cook the black rice in boiling water, check the package to know how many time.

  • Step 2

    Peel and grate the carrots. Finely cut the red cabbage. Make the dressing, whisk the mustard, olive oil and apple cider vinegar.

  • Step 3

    When the rice is cooked, Place it in a big bowl, add carrots and red cabbage and the dressing, mix well. Add some sprouted seeds on the top.
