- 2 peaches
- 1 avocado
- 1/ 3 cup crumbled feta cheese
- 1/ 3 cup slivered roasted almonds
- 4 handful arugula, (or other salad greens you love)
- 2 tablespoons honey
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Cut the peaches in slices. Heat on high a non-stick grill frying pan*. When it’s hot, place the peaches pieces on a side, let it grill for 3 minutes, then return them with a kitchen clamp.
Cut the avocado in slices. Mix in a bowl the honey, apple cider vinegar, and olive oil.
To serve, you can mix everything in a big salad bowl or serve on each plate. Place the arugula, peaches and avocado slices. Sprinkle with feta cheese and almonds and drizzle with the honey dressing. Salt and pepper. Serve!
*If you have a garden and a barbecue, I advise you to do grill the peaches on it! More fun!
