ingredients

  • 5 ripe bananas
  • 3 tabelspoons coconut oil
  • 2 tabelspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup coconut sugar
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 cups almond flour
  • 1 cup oat flour

Method

  • Step 1

    Preheat oven to 350° F. In a large bowl, mash bananas using a fork or wooden spatula. Add oil, vanilla extract, cinnamon, coconut sugar, and stir until combined.

  • Step 2

    Add the baking powder and baking soda and 1/3 of the flours. Stir and repeat until you run out of flour. Add to a loaf pan lined with parchment paper. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for 20 more mins. Cool and enjoy!
