ingredients

  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon salt
  • 3 ripe bananas, mashed
  • 3/4 cup vanilla almond milk
  • 1/4 cup coconut sugar
  • 1/4 cup coconut oil
  • 1 1/2 cups Cascadian Farm French Vanilla Almond Granola, divided

Method

  • Step 1

    Preheat theoven to 350°F and grease a 9x5 loaf pan with oil.

  • Step 2

    Add the whole wheat flour, baking powder, cinnamon, nutmeg, cardamom, and salt to a mixing bowl and stir to combine.

  • Step 3

    In a separate bowl mash the bananas then add in the vanilla almond milk, coconut sugar, and coconut oil. Whisk until smooth.

  • Step 4

    Once combined fold in the dry ingredients followed by 1 cup of granola.

  • Step 5

    Pour the batter into the prepared loaf pan and top with the remaining 1/2 cup of granola. Bake for 50 minutes rotating once halfway through.

  • Step 6

    Allow to cool completely before serving.
