Salted Caramel Ice Cream Brownie Sandwiches

INGREDIENTS

Cookies:
225 grams semisweet chocolate, roughly chopped
4 tablespoons of butter
90 grams all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
2 large eggs
150 grams  light brown sugar
1 teaspoon pure vanilla extract


Ice Cream Sandwich:
1 pint of Salted Caramel Ice Cream
150 grams of melted semi sweet chocolate
1 cup of chopped soft toffee candy


DIRECTIONS
Preheat oven to 350F/175C degrees. Put butter and chocolate in a heat-proof bowl

Sit over a pan of barely simmering water (a bain marie) and allow the chocolate and butter to melt, stirring occasionally.

In another bowl, whisk together flour, baking powder and salt. In a mixer bowl, beat eggs, brown sugar, and vanilla on high speed until pale and fluffy. Beat in melted chocolate on a low speed. Mix in flour mixture just until combined.

Drop heaping tablespoons of dough 2 to 3 inches apart onto baking sheets. Bake until cookies are shiny and crackly yet soft in centers, 9 to 12 minutes. Cool on baking sheets for 10 minutes. Transfer to a wire rack to cool completely.

For each ice cream sandwich, place one scoop of ice cream (about 1/3 cup) between two cookies. Gently press cookies together. Dip the edges in melted chocolate and then roll in chopped toffee pieces.
