"I made breakfast on @instagram live this morning and was a real goofy time. Thanks to all who stopped by to say hello! Here’s a recipe for ya:
Breakfast Eggs in Veggies
Toss in a cast iron skillet:
1 large potato, chopped into pieces
1 red bell pepper, de-seeded and chopped
Garlic powder, salt pepper, EVOO
Bake at 350*F for 15 mins.
Toss a large handful of greens (Swiss chard, spinach, kale, etc) with potatoes and crack eggs into greens. Add a little salt and pepper on the eggs and bake another 8 mins. Remove from oven, top with feta cheese and serve!"
