For the Pumpkin Spice Syrup
- 1 1/2 cups water
- 1 cup cane sugar (golden coconut sugar recommended)
- 1/2 cup brown sugar (or coconut sugar)
- 2 teaspoons pumpkin spice blend
- 1/4 cup pumpkin puree
- 2 cinnamon sticks

For the Apple Cider Caramel Syrup
- 2 cups apple cider
- 1 cup cane sugar
- 1/2 cup brown sugar (or coconut sugar)
- 1/4 cup heavy cream
- 2 teaspoons vanilla extract
- 2 tablespoons cold butter
Method
To make the Pumpkin Spice Syrup:
Step 1
In a saucepan, combine the water, cane sugar, brown sugar, pumpkin spice blend, pumpkin puree, and cinnamon sticks.
Step 2
Stir the mixture together and bring it to a simmer over low heat.
Step 3
llow it to simmer for 5 minutes, stirring every minute to ensure even mixing.
Step 4
After 5 minutes, turn off the heat and let the syrup cool completely.
Step 5
Once cooled, transfer the syrup to a pour spout container and store it in the refrigerator.
To make the Apple Cider Caramel Syrup:
Step 1
In a saucepan, bring the apple cider to a simmer over low heat. Allow it to simmer for about 35 minutes, until it reduces to approximately 1 1/2 cups.
Step 2
Stir in the cane sugar and brown sugar until fully dissolved.
Step 3
Next, add the heavy cream, vanilla extract, and cold butter to the mixture.
Step 4
Stir everything together and bring it back to a simmer over low heat.
Step 5
Let it simmer for an additional 5 minutes, stirring every minute.
Step 6
Once done, turn off the heat and let the caramel cool completely before transferring it to a pour spout container for storage in the refrigerator.

Note: The apple cider caramel may separate slightly in the fridge; just shake or stir before enjoying!
