If you've never tried a smash burger, now is the time! This one is served between two soft, buttery Swedish waffles, making it perfect for brunch or dinner.

Recipe Card

For the Swedish Waffles

ingredients

  • 1/2 cup butter
  • 3/4 cup milk
  • 1 3/4 cup all purpose flour
  • 2 eggs
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 3/4 cup ice cold water

For the Burgers

ingredients

  • 1 1/2 pounds ground chuck
  • Kosher salt and pepper, to taste
  • 8 slices cheese
  • pickles, for serving
  • ketchup, for serving
  • mayo, for serving
  • mustard, for serving
  • butter, for pan frying

For the Swedish Waffles

Method

  • Step 1

    Melt the butter in a saucepan and let it cool. Whisk together milk, flour, eggs, sugar and baking powder in a bowl. Add the melted butter and water.

  • Step 2

    Heat your waffle iron to medium, add a little butter and start making your waffles. Make them smaller than the size of the waffle iron, to fit the size of a burger patty. If you serve 4 people, you should have 8 small waffles. Set aside.

For the Burgers and Assembly

  • Step 1

    Divide the meat into 8 separate balls. Form each pile into a loose meatball, using a very soft touch - you don’t want the fat to start melting from the heat of your hands.

  • Step 2

    Heat a large pan to the highest temperature and put the meatballs in. After a few seconds, turn the balls over and then smash each of them into the pan using a hamburger press or a large spatula. The burger patties should be pretty thin, 1/2" or so. Season with salt and pepper.

  • Step 3

    After 1-2 minutes, flip the burger and add more salt and pepper. Cook for another minute, then take the burger patties out of the pan and to the side to rest.

  • Step 4

    Heat up a new pan with a little butter in it. Put two waffles in the pan and fry them on both sides, just to get a little color.

  • Step 5

    Start assembling the burger waffle in the pan. Put one burger patty on top of one of the waffles, then add cheese. On top, add another burger patty and another slice of cheese. Then top it with the other waffle. Press together with a burger press so the cheese melts. Do this for all four waffle burgers.

  • Step 6

    Serve immediately with toppings and condiments of your choice, for example pickles, ketchup, mustard and mayo.
