Lemon White Chocolate Pistachio Fudge

Ingredients:
4 cups dessicated coconut
1/2 cup coconut nectar or maple syrup
1/3 cup melted cacao butter
Zest of 2 large lemons
1/4 cup lemon juice
1/4 tsp salt
1/2 tsp vanilla powder
3-4 handfuls chopped pistachios

Directions:

1. Blend the coconut first in a food processor for 6-7 minutes until silky smooth and liquified. This is called "coconut butter". If your food processor is getting hot, simply pause for a bit then continue.
2. Add the rest of ingredients except pistachios and process until smooth.
3. Spread the mixture evenly into a small baking tin and then top with the pistachios, pressing with your hands to keep the Fudge flat.
4. Freeze for 1-2 hours until firm enough to slice. Keep refrigerated.
