Being gluten free does not mean having to miss out on fresh pasta. This one is made with a combination of chickpea flour, millet and sweet rice flour.

ingredients

  • 2 cups sifted chickpea flour(300g)
  • 1/4 cup tapioca starch
  • 1/4 cup sweet rice flour (also called 'glutinous rice flour')
  • 1 teaspoon xanthan gum
  • 4 large eggs
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • Water, as needed
  • Millet flour, for rolling out (or more chickpea flour)
