Being gluten free does not mean having to miss out on fresh pasta. This one is made with a combination of chickpea flour, millet and sweet rice flour.
Yield: Serves or Makes 4
cups sifted chickpea flour(300g)
0 1/4 cup tapioca starch
0 1/4 cup sweet rice flour (also called 'glutinous rice flour')
teaspoon xanthan gum
teaspoon olive oil
0 1/2 teaspoon salt
0 Water, as needed
0 Millet flour, for rolling out (or more chickpea flour)
