These scalloped potatoes are the epitome of comfort food! This hero side dish is layered with thinly slices potatoes, infused cream and plenty of cheese!

ingredients

  • 4 yukon gold potatoes, peeled and thinly sliced on a mandoline
  • 1 1/2 cups heavy cream
  • 1 sprigs of thyme, rosemary, or sage (or all three)
  • 4 cloves garlic,
  • Pinch of nutmeg
  • Salt and pepper, to taste.
  • 1/4 cup grated parmesan
  • 2 eggs
  • 2 cups grated gruyere cheese

Method

  • Step 1

    Preheat oven to 375°F.

  • Step 2

    In a medium saucepan over medium low heat add cream, herbs, garlic, nutmeg, salt, pepper and half of the parmesan. Gently simmer the cream until the flavors have married, about 10 minutes. Remove from heat and allow to cool slightly.

  • Step 3

    Remove the garlic and herbs from the cream and temper the eggs by slowly streaming the cream into the eggs while whisking.

  • Step 4

    Layer the potatoes at the bottom of an 8x8in baking dish. Layer potatoes with cheese, salt, and pepper. Once you have filled half of the baking dish, pour half of the cream mixture over the scalloped potatoes and continue layering. Once you have finished the layer, add the remaining cream and top with 1/2 cup of the grate gruyere cheese.

  • Step 5

    Bake at 375 for 30-40 minutes or until the top is golden brown and bubbly.
