For the Cake:
ingredients
- 1/3 cup brown sugar
- 1 tablespoon cinnamon, divided
- 2 1/2 apples, peeled and roughly chopped
- 2/3 cup plus 2 tablespoons granulated sugar, divided
- 1/2 cup softened butter
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1 teaspoon fine sea salt
- 1/2 cup plus 3 tablespoons milk
For the Glaze:

- 1 cup powdered sugar
- 3 tablespoons milk (more or less as needed for desired consistency)
Method
Step 1
Preheat the oven to 350°F. Grease a 9x5-inch loaf pan with non-stick spray or line with parchment paper for easy removal
Step 2
In a small bowl, mix the brown sugar with 2 teaspoons of cinnamon. Set aside.
Step 3
In another bowl, toss the chopped apples with 2 tbsp granulated sugar and the remaining 1 teaspoon of cinnamon. Set aside.
Step 4
In a stand mixer or using a hand mixer, beat the softened butter and 2/3 cup of granulated sugar together until fluffy, about 2 minutes.
Step 5
Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
Step 6
In a separate bowl, whisk together the flour, baking powder, and salt.
Step 7
Gradually add the dry ingredients to the butter mixture, mixing until just combined.
Step 8
Add 1/2 cup of milk and mix until the batter is smooth and creamy.
Step 9
Pour half of the batter into the prepared loaf pan and spread evenly.
Step 10
Add half of the apple mixture on top of the batter, then sprinkle half of the brown sugar-cinnamon mixture over the apples.
Step 11
Repeat the layers with the remaining batter, apples, and brown sugar mixture. Use a knife or toothpick to gently swirl the apple mixture into the batter, making sure the apples on top are pressed slightly into the batter.
Step 12
Place the loaf in the preheated oven and bake for approximately 1 hour, or until a toothpick inserted into the center comes out clean. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Step 13
In a small bowl, whisk together the powdered sugar and 3 tablespoons of milk, adding more milk as needed to reach your desired consistency.

Once the loaf is completely cool, drizzle the glaze over the top. Slice and enjoy!
