  • Bread Flour
  • Water
  • Instant Yeast
  • Salt
  • Olive oil

Method

  • Step 1

    Mix flour, oil, salt, instant yeast and water and let it sit for 30min.

  • Step 2

    1 set of stretch-and fold, rest 30 min.

  • Step 3

    2 sets coil fold, 30min rest in-between.

  • Step 4

    Overnight cold fermentation in the refrigerator.

Second proof

  • Step 1

    The next day, divide the dough into 12 equal portions.

  • Step 2

    Roll each portion into a ball and place in muffin tray.

  • Step 3

    Proof until (almost) double. Preheat oven at 230C.

  • Step 4

    Dimple, add desired toppings and bake for 18-20min.
