ingredients

  • 1/2 cup wild garlic
  • 1 1/2 cups all purpose flour
  • 1 egg
  • 2 1/3 cups any type of goat cheese
  • 1 lemon, zested
  • 1/2 cup chopped fresh chives
  • a pinch of salt
  • 2 tablespoons milk, as needed

Method

  • Step 1

    Blanch the wild garlic for 1 minute in boiling water. Drain and immediately transfer to ice water to stop the cooking process. Drain again, chop them roughly and blend until smooth. If you want, you can pass it through a food mill to make it even smoother.⁣

  • Step 2

    Mix the flour, egg and 1/3 cup of the wild garlic puree. Once everything is mixed, knead for about 15 minutes until the dough is soft and smooth. Cover and let rest for about 30 minutes.

  • Step 3

    In the meantime, mix the goat cheese, lemon zest, chives, and salt. Add the milk as needed to loosen up the consistency.

  • Step 4

    Once ready, roll out the dough, cut it in about 2 1/3-inch squares and place cherry sized bits of filling at their center.⁣ Then, proceeding one at a time, fold them in half, corner to corner, to get a triangle. Gently press to seal the edges, paying attention not to leave air pockets. Slightly fold the sides over the filling nugget, so that they kind of "hug" it, then roll the corners around two fingers at the bottom and press to seal.⁣

  • Step 5

    Bring a pot of water to a rolling boil and salt liberally. Cook the tortellini in salted boiling water for about 3 minutes.⁣

  • Step 6

    Served them tossed in melted butter, with some more lemon zest on top and some good grated pecorino.
