Eggplant creates delicious dips like this one, which is mixed with onion, nuts and mint - YUM!
Ingredients for 3: 3 medium eggplants Vegetable oil as needed 2 garlic cloves, minced 1/3 cup walnuts, chopped 1 large onion, peeled and diced 2 tsp crushed dried mint leaves 3/4 cup curd Salt & pepper 1. Cut the peeled eggplants in half lengthwise. 2. Heat vegetable oil in a nonstick skillet over medium high. Arrange the eggplants in a single layer, cover the skillet and fry them until golden brown on each sides. When done, mash the cooked eggplants to a very small pieces. 3. Meanwhile in another skillet fry the diced onion and put it aside. Separately fry garlics. Separately fry the dried mint leaves. 4. Add all ingredients in part 3 with chopped walnuts, curd, salt and pepper to the mashed eggplants, give them a good stir to blend well and cook over low heat for 10 min. 5. Transfer the eggplants mixture to the serving dish and garnish them as picture (optional) 6. Serve warm or in room temperature with any kind of bread you like.
