Savory Sweet Potato, Golden Beet & Maui Onion Smoothie Soup Bowl With Bone Broth & Oat Milk

Recipe:

2 sweet potatoes, peeled & chopped
2 golden beets, chopped
1 onion, chopped
4-5 cups bone broth, warmed on the stove
1-2 cups Oat Milk
olive oil, as needed
salt and pepper
Toppings: chopped chives, chia seeds, toasted walnuts

Directions:

Preheat the oven to 425˚. Mix the sweet potato, onion and beets with a bit of olive oil and salt and pepper and roast for about 45 minutes, or until tender. Let cool slightly.

Add vegetables, stock and oat milk to a high-powered blender and process until smooth. You may have to blend in batches depending on the size of your blender. Adjust the liquid to suit your preference, if you like a thick soup add less, if you like a thin soup, add more. Season to taste with salt and pepper. Heat soup in a pot on the stove for a few minutes to warm through.

Top with chives, toasted walnuts and chia seeds and serve warm!
