We like to lead a no waste lifestyle. So when we can make cocktails from that, it just gets better! @robgullixson uses apple cores and peels to make the simple syrup for this whiskey cocktail. It's full of ginger and lemony flavors that we love, with a hint of cinnamon to tie it all together!

Spiced Apple, Ginger and Lemon Cocktail

ingredients

  • 1 1/2 ounce apple simple syrup (recipe below)
  • 1 ounce Laird's Applejack
  • 3/4 ounce Bulleit Rye Whiskey
  • 1 teaspoon Canton Ginger Liquer
  • 2 teaspoons freshly juiced lemon
  • 4 drops Urban Moonshine
  • Organic Maple Bitters, to taste

Spiced Apple, Ginger and Lemon Cocktail

Method

  • Step 1

    Combine ingredients in a shaker; taste and adjust according to strength of apple syrup. Add 5-6 ice cubes and stir for 25 seconds. Strain into chilled coupe glass. Garnish with thin slice of apple.

  • Step 2

    Note: The apple simple syrup will vary based on variety of apple, exact reduction, etc. - so (as always) adjust to taste.

For the Apple Simple Syrup:

ingredients

  • Cores and peels of 4 apples (great use of trimmings from apple pie)
  • 1 cup sugar
  • 2 cups water
  • 1 cinnamon stick
  • a pinch of ground nutmeg
  • 3 whole cloves

For the Apple Simple Syrup

  • Step 1

    Place the apple cores and peels in a small sauce pan. Add sugar and water to cover the apples, then add spices. Bring to a boil, then reduce to a simmer. Reduce by two thirds or to taste. Strain through fine-mesh sieve into container to chill and/or store.
