ingredients
- 4 cups baby kale
- 2 avocados, sliced
- 1 candy-striped beet, sliced raw on a mandolin
- 1 large cucumber, (cut into ribbons by using a vegetable peeler and peeling down the length of the cucumber)
- 1 cup fresh blackberries, or berry of choice
- lemon juice, to taste
- olive oil, to taste
- salt and freshly ground black pepper
Method
Step 1
Add baby kale, avocado, beets, cucumbers and berries to a mixing bowl. Toss with lemon juice and olive oil, to taste, then season with salt and freshly ground black pepper.
