Spaghetti With Meatballs & Pecorino Romano

"Classic #spaghetti with #meatballs from @food52 Genius Recipes, by Kristen Miglore. The meatballs are from Rao's which were a good basic meatball. They were incredibly moist, but, I thought they could use a bit more flavor. The star of the dish was the gloriously simple, yet incredibly flavorful, tomato sauce from Marcella Hazen. The sauce calls for just four ingredients: tomatoes, one onion cut in half, butter, and a touch of salt. I was curious to see if the sauce lived up to the hype, and it did. After 45 minutes of simmering slowly on the stovetop, you are left with a rich and beautiful sauce that is rather delicate in flavor but truly allows the tomato to be the star. I used canned #sanmarzano tomatoes. The sauce is a definite keeper. This is for my #rainydaybitescookbookclub. Edited to add that I cooked up a batch of the meatballs in the afternoon, when we ate them for our dinner at night, the flavor really improved, and they were quite good. If you make this recipe, make the meatballs ahead of time."
