ingredients
- 1 cup softened butter
- 1 cup sugar
- 4 large eggs
- 1 3/4 cups all purpose flour
- 1 1/4 teaspoons baking powder
- 1/4 cups milk
- 1 teaspoons vanilla extract
- 1/4 teaspoons salt
Method
Step 1
Pre-heat the oven to 350 degrees celsius and grease a large loaf pan with butter & flour.
Step 2
Beat the butter with a hand mixer until light and fluffy. Gradually add in the sugar. Beat until pale yellow.
Step 3
Add in the eggs one at a time, beating each egg well before adding the next. Add the vanilla extract and mix well.
Step 4
Sift the flour, baking powder and salt in a separate bowl. Fold in half the flour mixture into the batter, alternating with the milk. Start and end with the flour mixture.
Step 5
Pour the batter into the greased loaf pan. Bake in the preheated oven for 30 to 40 minutes until a skewer inserted in the centre comes out clean.
Step 6
Cool completely before removing from the pan, then slice and enjoy!
