Angel food cake is one of my favourite; effortlessly light, not too difficult to bake, with so many flavour options, and the prettiest batter! It is a cakes with history, definitely not a fad. People will tell you their grandmothers made them, and if they're lucky they still have her pan, those old pans are gold. You'll need an electric mixer or strong whisking arm, and one of those special pans - it's worth the investment! It's a cake you'll want to bake over and over.
