Raw Raspberry Bars with Chocolate
Ingredients
Raw Chocolate Drizzle
200 g raw cacao butter
150 g cacao paste
100 g raw cacao powder
3 tbsp coconut oil
4 tbsp maple syrup
1/2 tsp lecithin
1 tbsp lucuma powder
1/2 tsp vanilla bean powder
sea salt to taste
Raw Raspberry Filling
1 cup cashews soaked in water for 5-12 hours
4 tbsp water
3 tbsp coconut oil melted
3 tbsp cacao butter melted
4 tbsp chilled full fat coconut cream
1 cup raspberries
2-3 tbsp maple syrup
1 tbsp lucuma powder
1 tbsp maca powder
1 tsp lechitin
1/4 tsp vanilla bean powder
Directions:
Place the butter, paste, coconut oil and maple syrup
in a water bath and let melt carefully. Add rest of the ingredients and stir until smooth. Set aside until ready to use.
Raw Raspberry Filling
Making the filling add the ingredients in the same order they appear in the recipe. Add one ingredient at a time and blend in a high speed blender until everything is mixed to a smooth finish.
Place the filling into a parchment lined pan and set them in the fridge to set for a frew hours. Once ready, remove from the pan, slice into strips & drizzle with raw chocolate.
