ingredients
- Boiled wheat noodles (enough for 2 servings)
- 3 large scallions, chopped
- 1/3 cup neutral oil (such as vegetable or canola oil)
- 1 tablespoon dark soy sauce
- 2 tablespoons light soy sauce
- 1 tablespoon vegetarian oyster sauce (optional)
- 1 tablespoon brown sugar (or sweetener of your choice)
Method
Step 1
Cook the wheat noodles according to the package instructions. Drain and set aside.
Step 2
In a small saucepan, heat the neutral oil over medium heat. Add the chopped scallions and cook for about 2-3 minutes, stirring frequently, until the scallions become fragrant and slightly softened. Be careful not to let them burn.
Step 3
Remove the saucepan from the heat. Stir in the dark soy sauce, light soy sauce, vegetarian oyster sauce (if using), and brown sugar until well combined.
Step 4
In a large mixing bowl, combine the boiled noodles with the scallion oil mixture. Toss until the noodles are evenly coated in the sauce.
Step 5
Divide the noodles into bowls and enjoy warm or at room temperature.
