Pumpkin Spice Chia Pudding Parfait

Ingredients
3 cups unsweetened, natural almond milk
1 cup chia seeds
1 cup pumpkin puree
1/2 cup full-fat coconut milk
2 tbsp maple syrup
1 tsp ground cinnamon
1/2 tsp ground clove
1/2 tsp ground nutmeg
1/2 tsp organic vanilla extract
1 tsp orange zest
sea salt
Combine almond milk and chia seeds in a mason jar - shake vigorously to combine and set aside at room temperature for at least 2 hours or until seeds are swollen
In a blender, blitz togetherpumpkin purée, coconut milk, syrup,cinnamon, cloves, nutmeg, vanilla extract, orange zest, and a small pinch of sea salt
Create the parfait by alternately layering chia pudding and pumpkin spice purée - top with toasted nuts and dried cranberries.
