Vegan Chocolate Oat Bars with Dates and Cashews
Chocolate Oat Bars - Coconut Cashew Edition - vegan+gf, 123 cal, simple real food ingredients (as always) ridic filling and good for you. Hi, I’m having a crappy week. Picked up a fight with my mom, got pulled into more and more time sensitive kind of work, feeling uninspired with food creations (pasta salad rotation for lunch anybody else? It’s just so easy 🤷‍♀️ ), my digestion is still going “what is wrong with this sedentary rat, why is she not MOVING 🐭 “ even though I am exercising it doesn’t make a difference, it’s just WEIRD not to leave your home or move about like a regular human in society. BUT there are still these Freaking Chocolate Oat Bars 🙌🙌 Yep, I’m still making them and eating them and I swear they get THICKER and CHUNKIER with every iteration 😱 This almost no-added-sugar dessert is the absolute highlight of my days. I keep them frozen 🥶 eat one with lunch, they are so filling and so COLD and so satisfying, I don’t even think about food until dinner. Unless it’s running day then all I think about is food and that’s that 🤷‍♀️ I really like the cashews in these bars, very recommended to leave them whole like that. Of course you can use other nuts too if you don’t have cashews on hand. -@plentysweet200

Add ingredients directly to your favorite online grocery cart (where available).

ingredients

  • 1/2 cup medjool dates
  • 2 tablespoons cashew butter
  • 3/4 cup quick oats
  • 1/4 cup desiccated coconut
  • 2 tablespoons cocoa powder
  • 1/4 cup nut milk
  • 3 tablespoons cashew butter
  • 3 tablespoons chocolate chips
  • 1/4 cup cashews

Method

  • Step 1

    Add to your processor dates, cashew butter, oats, coconut, cocoa until meal like. Add enough nut milk 1 tablespoon at a time to turn it into a non sticky dough, about 4 tablespoons.

  • Step 2

    Press evenly into loaf pan with parchment, freeze 5-10 minutes. In a small bowl, add chocolate chips and cashew butter.

  • Step 3

    Microwave 30 seconds at a time and stir until all chocolate is melted.

  • Step 4

    Pour into loaf pan, tap to even it, sprinkle cashews (press them down gently) and freeze again and slice.
