ingredients
- 1 flax egg, (1 tablespoon flax meal mixed with 2 tablespoons water)
- 1 ripe banana, mashed
- 2 tablespoons maple syrup
- 2 tablespoons nut milk
- 1/2 cup oat flour
- 1/2 cup almond flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- pinch salt
- 2 peanut butter cups, chopped
Method
Step 1
Preheat oven to 350F and grease your pan (maybe even line with parchment).
Step 2
In a large bowl, mix the egg, banana, maple syrup, milk, vanilla.
Step 3
In a separate bowl, whisk together flour, almond flour, cocoa, baking powder, salt.
Step 4
Transfer to loaf pan and top with chopped peanut cups.
Step 5
Bake 40 minutes or until knife inserted comes out clean.
Step 6
Remove from oven and allow to cool completely.
