ingredients

  • 1/2 cup pumpkin purée
  • 1 tablespoon ground flax seeds
  • 2 tablespoons water
  • 1 tablespoon apple cider vinegar
  • 2 teapsoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon sugar or maple syrup
  • 1 1/2 cups white whole wheat flour
  • 1 1/4 cups non-dairy milk

Method

  • Step 1

    Preheat a griddle or non-stick pan.

  • Step 2

    In a mixing bowl, add pumpkin, flax seed and water and give mixture a good stir. Let sit for 2-3 minutes.

  • Step 3

    Add apple cider vinegar, apple pie spice, salt, and sugar and mix well. Add baking soda and baking powder and stir well. You will notice the mixture react and start to fluff up. Add in flour and milk and mix to form a thick batter (be careful not to over mix).

  • Step 4

    Scoop 1/4 cup of pancake batter onto heated griddle and cook for 2-3 minutes or until bottom of pancake is golden. Flip and cook other side for another 2-3 minutes. Remove from heat and eat.
