ingredients

  • 2 (20 ounce) cans jackfruit, in brine or water, drained and rinsed
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper, optional
  • 1 tablespoon avocado oil
  • 3/4 cup barbecue sauce, mixed with 1/4 cup water
  • 4 burger buns
  • 1 (12 ounce) bag broccoli slaw
  • 1/2 cup vegan mayonnaise, plus more for serving
  • 1 tablespoon white vinegar, or apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • Lettuce, for serving
  • Hot sauce, optional, for garnish
  • Pickles, for serving

Method

  • Step 1

    Cut off the core of the jackfruit and set aside. In a large bowl whisk together brown sugar, smoked paprika, garlic powder, onion powder, chili powder, salt and black pepper, and cayenne if using. Add the jackfruit and toss until thoroughly coated.

  • Step 2

    Heat a pan over medium heat. Add oil. Once hot, add the jackfruit. Cook for about 3 minutes until jackfruit begins to yellow. Flip jackfruit over, pour in barbecue sauce, and gently stir. Lower heat to medium-low, cover and let simmer about 20 minutes.

  • Step 3

    Meanwhile, make broccoli slaw. Whisk together mayonnaise, vinegar, granulated sugar, black pepper and salt. Toss with the broccoli slaw and set aside.

  • Step 4

    Once jackfruit is done coking shred with 2 forks. Increase heat to medium-high and cook for a few minutes more. Remove from heat.

  • Step 5

    To assemble the sandwiches, spread bun with mayonnaise if desired. Layer jackfruit, extra BBQ sauce, broccoli slaw and any other desired toppings like greens or pickled veggies and enjoy!
