Kale And White Bean Soup

ingredients

  • 1 tbsp olive oil
  • 1 roma tomato, diced
  • 1 carrot, diced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Pinch of red pepper flakes
  • salt and freshly gound pepper
  • 3 cups vegetable broth
  • 1 can white beans (great northern), drained and rinsed
  • A couple leaves of lancinato kale, roughly chopped

Method

  • Step 1

    Heat the olive oil in a medium sized pot over medium heat. Add carrot and tomato, and cook for about 2-3 minutes. Add the seasoning and stock and bring to a boil. Reduce heat to a simmer and cook about 30 minutes, or until the carrot is tender. Add the beans and kale and cook for 5 minutes more, or until the kale is cooked. Season to taste with salt and pepper and enjoy!
