ingredients
- 1/4 cup tapioca pearls
- 3/4 cup coconut milk
- 1/4 cup water
- 2 tablespoons maple syrup
- 2 tablespoons coconut sugar
- 1/4 cup cocoa powder
- pinch of salt
- 1 teaspoon vanilla extract
- 1/4 cup walnuts, crushed
Method
Step 1
In a small bowl, add the tapioca and enough water to cover the tapioca pearls by about an inch. Soak for an hour.
Step 2
In a small saucepan , whisk coconut milk, water, maple syrup, cocoa powder, and pinch of salt together.
Step 3
Drain the tapioca and add to the coconut milk mixture and cook mixture over medium heat, stirring often. If it bubbles, turn the heat down slightly.
Step 4
Once all of the pearls are translucent, remove from heat. It will look like chocolate soup at this point, but thicken as it cools.
Step 5
Stir in the vanilla extract and crushed walnuts . Transfer right away to a container and seal with a lid. Place in the refrigerator and chill for at least 3 hours.
Step 6
Once chilled, give the pudding a good stir. If it is too firm, you can leave it out for 5 minutes or put it in microwave for 30 secs. Serve cold.
