"Corn fritters w/ sriracha horseradish cream sauce What do you do when you have leftover horseradish sriracha sauce from the night before but nothing to dip in it I make my kids a lunch that they love, but that I know will go perfectly with my sauce, when I sneak a few away from them! So, that's what I did. I made corn fritters, which they love, and were amazing in my dip. The crunchiness from the fritter, with the sweet corn and the spiciness of the horseradish and sriracha were ????. Not to mention that this meal was a total win bc my kids loooove these and they take so fast to make! INGREDIENTS

Corn Fritters:
1 c spelt flour
1 tsp baking powder
1/2 tsp salt
1 tsp sugar
1 Tbsp melted butter
1/2 cup milk
1 egg, lightly beaten
1 can corn, drained

Horseradish Sauce:
3 Tbsp horseradish sauce
2 tsp sriracha
1 Tbsp mayo
1 tsp Dijon mustard
2 tsp cider vinegar
2 tsp sugar
1 tsp Worcestershire sauce
 

DIRECTIONS
Mix all fritter ingredients in a bowl, except for the corn. Once combined, add corn and mix (don't over mix).

Fill a pot half-way up with oil and set over medium heat. Drop batter in dollops using two spoons. Cook, turning once, until fritters are golden brown. Remove onto rack to cool and sprinkle with salt right away.

To prepare horseradish sauce, combine all the sauce ingredients and mix well.
