Corn Fritters:1 c spelt flour 1 tsp baking powder 1/2 tsp salt 1 tsp sugar 1 Tbsp melted butter 1/2 cup milk 1 egg, lightly beaten 1 can corn, drained
Horseradish Sauce:3 Tbsp horseradish sauce2 tsp sriracha1 Tbsp mayo1 tsp Dijon mustard2 tsp cider vinegar2 tsp sugar1 tsp Worcestershire sauce DIRECTIONSMix all fritter ingredients in a bowl, except for the corn. Once combined, add corn and mix (don't over mix). Fill a pot half-way up with oil and set over medium heat. Drop batter in dollops using two spoons. Cook, turning once, until fritters are golden brown. Remove onto rack to cool and sprinkle with salt right away. To prepare horseradish sauce, combine all the sauce ingredients and mix well.
