ingredients
- 1 cup unsweetened almond milk
- 1/2 cup pure maple syrup
- 1/4 cup melted vegan butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 2 cups quick oats
- 2 cups frozen wild blueberries
Method
Step 1
Preheat oven to 375F.
Step 2
In a large bowl, mix together almond milk, maple syrup, vegan butter, vanilla, baking powder and cinnamon.
Step 3
Then, add the oats and mix until a batter forms. Finally, fold in the blueberries. Pour the mixture into a 9x11-inch baking dish and bake for 45 minutes. The oats will be golden, the blueberries will be bubbly and your kitchen will smell incredible.
Step 4
Serve immediately or store in an airtight container in the fridge for 3 to 5 days. To reheat and enjoy later, simply portion out a serving into a microwave-safe bowl and microwave for 30 to 45 seconds.
