This soup looks perfectly light, fresh and so bright. RECIPE: Yields 6 cups 1 shallot 1 leek 2 cloves garlic 1 tbsp butter 2 Tbsp coconut oil 1 can coconut milk 4 cups good chicken or vegetable stock 1 knob grated ginger 2 cups of green vegetables, mostly fresh peas Saute shallot, leek, and garlic in butter and oil for 15 minutes. Add coconut milk, stock, ginger, and vegetables/peas. Remove half the vegetables. Blend the rest. Reunite.
