ingredients
- 2 cups rolled oats
- 1/2 cup walnuts, chopped
- 1/2 cup almonds, sliced
- 1/4 cup plus 2 tablespoons cashew butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- 1/8 teaspoon ground cloves
Method
Step 1
Preheat oven to 300ºF.
Step 2
In a large bowl, mix the maple syrup, cashew butter, vanilla extract and all the spices together until well combined. Add in the rolled oats, chopped walnuts and sliced almonds, then mix until everything is well combined and all of the dry ingredients are evenly coated.
Step 3
Transfer mixture to a lined baking tray and spread it evenly using a spatula. Place the tray into the oven and allow it to bake for 12 minutes. Then, increase the heat to 350F and allow it to bake for an additional 8-10 minutes, or until the granola looks golden brown.
Step 4
Allow the granola to completely cool. Then, using your hands break the large clusters into desired size pieces. Store in an air tight container or use right away and enjoy!
