"Third week of isolation for us, still at least 3 more to go. How is it where you live? For me some days are worse, like yesterday, some days are better, like today, but deep inside I can't stop worrying that something could happen to the ones I love ♥️😔 Today I felt like having crêpes for breakfast could be a good idea. I wasn't feeling very creative so I filled them only with plain soy yogurt. But all the berries, chocolate and coconut syrup on top definitely did the trick"

ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon coconut sugar
  • 1 tablespoon coconut oil, melted
  • Pinch of salt
  • 1 1/3 cups plant milk
  • 1 1/2 cups soy yogurt
  • 2 cups mixed berries
  • Dark chocolate, for topping
  • coconut syrup, for drizzling

Method

  • Step 1

    Add all ingredients to a bowl and whisk until smooth. Allow to rest for 10 minutes

  • Step 2

    Heat a nonstick pan with oil and pour 1/4 -1/3 cup of batter at a time. Cook until set, flip and continue cooking until both sides are lightly brown.

  • Step 3

    To assemble, fill crêpes soy yogurt, top with fresh mixed berries, chocolate and a drizzle of syrup.
