ingredients

  • 1/2 cup old fashioned oats
  • 5 medium dates
  • 3/4 cup hot water
  • Pinch of sea salt
  • 1/2 cup unsweetened oat or coconut milk
  • 1 banana, sliced
  • 1 tablespoon coconut oil
  • 2 tablespoons vegan chocolate chips
  • Almond butter, for drizzling

Method

  • Step 1

    In a small pot combine oats, dates and water. Let soak for 10 minutes.

  • Step 2

    Next, mix in salt and oat milk. Bring to a boil over medium heat, cooking for 5 minutes.

  • Step 3

    In a small skillet, cook banana slices in coconut oil over medium heat until golden brow and caramelized, about 8 minutes. Top oatmeal with banana slices, chocolate chips, and almond butter. Serve immediately.
