"A friendly reminder - be good and gentle to yourself ♥️ You don't need to learn new skills, create new content, you don't have to be perfect. You can focus only on surviving the day and it's perfectly fine too ♥️ Do whatever feels good for your body and soul ♥️ I felt like creating something beautiful today, but not a recipe, just visually pleasing, because looking at beautiful things always makes me happy. I used fresh fruits (blueberries, kiwis and strawberries), granola and coconut chia pudding to create healthy snacks for the kids. I took my time to photograph the jars and it felt great. Now I will focus on surviving the rest of the day without that overwhelming feeling of anxiety that hits me every time I think about the future. Hope you are all safe ❤️❤️❤️"

ingredients

  • 1/2 cup full-fat coconut milk
  • 1/2 cup light coconut milk
  • 1 tablespoons maple syrup
  • 4 tablespoons chia seeds
  • 1 cup mixed fruit of choice
  • 1/2 cup granola of choice

Method

  • Step 1

    Add to coconut milk, maple syrup and chia seeds to a bowl. Stir to combine and place in the fridge to soak for 40 minutes to 1 hour.

  • Step 2

    To assemble, layer chia pudding, granola and mixed fruit into a bowl or glass and enjoy!
